Alright, let’s talk about this here mushroom white wine sauce. You know, the fancy stuff they pour on them chicken breasts or noodles at them city restaurants. Don’t you worry none, it ain’t as hard to make as them city folks make it seem. I’ll tell ya how to do it, the easy way, like we do it back home.
First off, you gonna need some mushrooms. Now, I like the plain ol’ white button kind, but you can use whatever you got. Them fancy brown ones work too, if you’re feelin’ highfalutin. Just make sure you clean ’em good. Wipe ’em off with a damp cloth or somethin’, get all that dirt off. We don’t want no grit in our sauce, now do we?
- Clean the mushrooms real good.
- Slice ’em up, not too thick, not too thin.
Next, you’re gonna need some oil. I usually use whatever’s sittin’ on the counter, you know, canola, vegetable, even that olive stuff if I’m feelin’ fancy. Just a bit, maybe a couple of tablespoons. Don’t go pourin’ the whole bottle in there, we ain’t fryin’ chicken! Pour it in a pan, get it nice and hot over a medium kinda fire.
Then, you’re gonna toss in some chopped onion. I ain’t talkin’ ’bout a whole onion, just a little bit. Maybe a third of a cup, chopped up fine. You don’t want big chunks in your sauce. Let that onion cook for a bit, ’til it gets soft and see-through, you know what I mean? Don’t let it burn though, keep an eye on it.
Now, for the garlic. I love garlic, it makes everything taste better. Just one clove, minced up real good. You can use that garlic press thingy if you got one, or just chop it up fine with a knife. Toss it in with the onions and let it cook for just a minute or so. Don’t let it burn, burnt garlic tastes awful.
Okay, now it’s time for the mushrooms. Throw ’em in the pan with the onions and garlic and let ’em cook. They’ll release some water at first, that’s okay. Just keep cookin’ ’em, stirrin’ ’em every now and then, until they get nice and brown and all that water’s gone. This takes a little while, so be patient.
Once the mushrooms are cooked, it’s time for the white wine. Now, I ain’t talkin’ ’bout that fancy expensive stuff. Just a regular ol’ dry white wine, nothin’ too sweet. You can get a bottle at the store for a few dollars. Pour in about half a cup and let it simmer for a bit, ’til it reduces by half. This helps cook off the alcohol and concentrates the flavor.
After the wine has reduced, you’re gonna add some chicken broth. About a cup or so. Just plain ol’ chicken broth, you can get it in a can or a carton. Pour it in and let it simmer for a few minutes. This will help thin out the sauce a bit.
Next, you gonna thicken that sauce up a bit. You can use a little flour and butter. Melt a tablespoon of butter in a separate pan, whisk in a tablespoon of flour, cook for a minute, then whisk that into the sauce. Or, if you’re lazy like me, just mix a tablespoon of cornstarch with a little bit of water and stir it into the sauce. Either way works fine. Just make sure you cook it for a minute or two after you add the thickener, so the sauce doesn’t taste starchy.
Finally, you’re gonna finish the sauce with a little bit of cream. Just a splash, maybe a quarter of a cup. This will make the sauce nice and rich and creamy. You can also add salt and pepper to your liking, give the sauce a taste and see if it needs a little more something somethin’. You can use heavy cream if you want to be really fancy, or just plain ol’ milk if that’s all you got. Stir it in and let the sauce simmer for just a minute or two longer, ’til it’s heated through.
And that’s it, you got yourself some mushroom white wine sauce. See? I told ya it wasn’t that hard. Now you can pour it over your chicken, your noodles, or whatever else you feel like. It’s good on just about anything. You know, this sauce is good for special occasions, but it ain’t so hard you can’t make it for a regular Tuesday night dinner. Don’t be scared to try it, even if you ain’t never made a sauce before in your life. You can do it, I know you can.
