Alright, let’s get this straight, I ain’t no fancy chef or nothin’, but I can sure whip up some good grub. Today, we’re gonna make this here spicy potato stuffed flatbread. It ain’t hard, even my old hands can do it, so you city folks should have no problem.
First off, we gotta make the dough. You know, the outside part. It’s just flour, a bit of salt – gotta give it some taste, you see – and water. Mix it all up in a bowl. Don’t need no fancy mixer, your hands work just fine. Knead it good, like you’re wringing out a wet rag. Keep kneadin’ till it ain’t sticky no more. Then, put it aside, cover it with a damp cloth, and let it rest a spell. Let it sit there while we get to the good stuff – the potatoes.
Now, the potatoes. I like to use them red ones, but any kind will do, I reckon. Boil ’em till they’re soft, real soft. Then mash ’em up good. Add some salt, some pepper, and a whole lotta spice. I use chili powder, but you can use whatever you got. Don’t be shy with the spice! We want it to have a kick! Oh, and I almost forgot, gotta chop up some onions and green chilies real fine, and fry ’em up in a pan till they’re soft. Mix that into the potatoes too. Gives it a real nice flavor, you know?
- Flour – about 2 cups
- Salt – a pinch for the dough, and to taste for the filling
- Water – enough to make a dough
- Potatoes – about 4 medium ones
- Onion – one medium, chopped
- Green chilies – 2 or 3, chopped (or more if you like it real hot!)
- Chili powder – or any spice you like, to taste
- Oil or ghee – for cooking
Alright, the dough should be rested by now. Take a chunk of it, roll it out into a little circle, kinda like a small pancake. Not too thin, though, or it’ll tear. Then, take a spoonful of that spicy potato mix and put it right in the middle. Now, fold the dough over and seal it up good. You can pinch the edges together, or use a fork, whatever works. Just make sure it’s closed tight, so the potatoes don’t fall out.
Now, we gotta cook these things. Get yourself a big pan, put some oil or ghee in it – I like ghee, gives it a nice flavor – and heat it up. Not too hot, though, or you’ll burn ‘em. Put the stuffed flatbreads in the pan and cook ‘em till they’re golden brown on both sides. You gotta watch ‘em close and flip ‘em over so they don’t burn. It’ll take a few minutes on each side. You’ll know they’re done when they’re nice and crispy and the potatoes are cooked through.
That’s it! See? Told ya it wasn’t hard. Now you got yourself some spicy potato stuffed flatbread. It’s good eatin’, I tell ya. You can eat it with some yogurt, or some chutney, or just plain. It’s good any way you slice it. My grandkids love it, even that picky one. They always ask me to make it when they come visit.
This ain’t just some fancy recipe I found in a book or on that there inter-web thingy. This is the way my mama made it, and her mama before her. Good, honest food, that’s what it is. It fills your belly and warms your soul. And that, my dears, is all that matters.
So go on, give it a try. You might just surprise yourself. And even if it ain’t perfect the first time, don’t you worry. Just keep practicin’, and you’ll get the hang of it. Cooking ain’t about being perfect, it’s about putting your heart into it. And a whole lotta spice, of course! Now get to it and enjoy your homemade spicy potato stuffed flatbread!
