Okay, now dump them carrots on top of all that goodness. Give ’em a good toss, make sure everything’s coated. You want every piece to get some of that butter and garlic and rosemary love. Spread ‘em out a bit, don’t want ‘em all bunched up.
Now, the important part, you gotta seal that foil up tight. Fold it over, crimp the edges real good. You don’t want any of that juice leakin’ out, that’s the best part! Make sure there ain’t no holes. If you got holes, the steam will escape and carrots won’t be as soft.
Get your campfire goin’. You want a good bed of coals, not big flames. Flames will just burn the outside and leave the inside raw, and nobody wants that. Coals are where it’s at. Nice and even heat. If you’re using a grill, medium heat works just fine.
Put your foil packet right on them coals. Not in the flames! Let it cook for, oh, I don’t know, maybe 20 minutes? Could be longer, could be shorter, depends on how hot your fire is. You gotta check it, you know? Carefully open the foil a little bit – careful, it’s hot! – and poke a carrot with a fork. If it’s soft, it’s done. If not, close it up and let it cook some more.
When they’re done, take ‘em off the fire and let ‘em sit for a minute or two. Don’t burn your fingers tryin’ to open it right away. Steam burns are the worst! Then, carefully open up that foil, and there you go! Grilled carrots, cooked right in the campfire. Smells good, don’t it?
They’re soft and buttery, and that garlic and rosemary, oh my! Best darn carrots you ever ate, I guarantee it. You can eat ’em right out of the foil, no need for plates. Less dishes to wash, that’s what I say. And the best part? It only took about 15 minutes or so to get everything ready, just like my daughter told me. Easy peasy!
Now, you can add other stuff in there too, if you want. Onions, peppers, whatever you got on hand. It’s all good. Just make sure to chop everything about the same size so it cooks evenly. And don’t forget the salt and pepper! Gotta have salt and pepper. Makes everything taste better.
