Creamy Zucchini Potato Soup: The Ultimate Comfort Food

Alright, let’s talk about this here zucchini potato soup. My neighbor, bless her heart, she give me this recipe. Said it’s good for ya, and easy to make. And you know what? She weren’t lyin’!

First thing, you gotta get yourself some zucchinis. You know, those long green things? Don’t matter if they a little beat up, we gonna chop ‘em up anyways. And potatoes, gotta have potatoes. I like them red ones, but any kind will do. Just make sure you scrub ‘em good, get all that dirt off. Nobody wants to eat dirt, right? Heh.

Creamy Zucchini Potato Soup: The Ultimate Comfort Food

So, you chop up the zucchinis and potatoes. Not too big, not too small. Just, you know, bite-sized pieces. Then, you get yourself a big pot. I use my grandma’s old pot, it’s seen better days, but it still works good. You put a little oil in there, just enough to coat the bottom. And then, you throw in some onions. Chop them up too, not too fine though. We ain’t fancy here.

Let them onions cook for a bit, til they get all soft and see-through. Then, you dump in the zucchini and potatoes. Give it a good stir, make sure everything’s coated in that oil. Now, you add some water. Just enough to cover the vegetables. Don’t go overboard, you can always add more later. And then, the secret ingredient. Well, it ain’t so secret, but it makes the soup real good. It’s chicken broth. Yeah, you pour some of that in there too. How much? I dunno, a couple of cups maybe? Just eyeball it, you’ll be fine.

Okay, so now you gotta let it simmer. That means, you turn the heat down low, and let it cook slow. This is the important part. You gotta let those vegetables get all soft and mushy. That’s what makes the soup creamy, see? No need for no fancy cream or nothin’. How long do you simmer it? Well, until it’s done. How you know it’s done? You poke a potato with a fork. If it goes in easy, then it’s done. See? Easy peasy.

  • Get yourself some zucchinis and potatoes.
  • Chop them up into bite-sized pieces.
  • Get a big pot and put some oil in it.
  • Chop up some onions and cook them until they’re soft.
  • Add the zucchini, potatoes, water, and chicken broth to the pot.
  • Let it simmer until the vegetables are soft.

Now, some folks like to add spices. Me? I just use salt and pepper. That’s all you need, really. But, you know, you can do whatever you want. If you like it spicy, add some chili powder. If you like it herby, add some thyme or rosemary. It’s your soup, you do what you want with it.

Once the vegetables are all soft, you gotta blend it up. I use one of them stick blenders. You just stick it in the pot and blend it up til it’s smooth. If you don’t have one of them, you can use a regular blender. Just be careful, it’s hot! You don’t wanna burn yourself. And don’t fill the blender all the way up, it’ll explode. I learned that the hard way. Heh.

And there you have it, zucchini potato soup. It’s warm, it’s filling, and it’s good for ya. My neighbor was right, this soup is a winner. It’s so easy to make, even I can do it. And that’s sayin’ somethin’. You can eat it for lunch, you can eat it for dinner. You can even eat it for breakfast, if you want. I ain’t gonna judge ya. It’s good anytime of day. And you know what? It’s cheap too. Zucchinis and potatoes, they don’t cost much. So, you can feed the whole family without breakin’ the bank. That’s important these days, you know?

So, go on, give it a try. You won’t be disappointed. And if you don’t like it, well, more for me. Heh.

One last thing, this soup, it’s good for when you’re feelin’ under the weather. You know, got a cold or something. It’ll warm you right up. And it’s easy on the stomach too. So, there you have it. My neighbor’s zucchini potato soup. It’s the best darn soup I ever had. And I ain’t just sayin’ that.
