Okay, so I’ve been craving something sweet and decadent lately, and I had this crazy idea to combine a bunch of my favorite things into one epic dessert. I’m talking peanut butter, brownies, cheesecake, and ice cream – all in one glorious concoction. I decided to go for it and make what I’m calling “Peanut Butter Brownie Double Cheesecake Ice Cream.”
First, I gathered all my ingredients. I grabbed some cream cheese, heavy cream, sugar, eggs, vanilla extract, peanut butter (smooth, of course), and the stuff to make brownies from scratch, I use a 9×13 dish for my brownies. I also got some chocolate chips because, why not? It took a while to get everything together, but I was determined.
Making the Brownie Base
- First, I whipped up a batch of my go-to brownie recipe. Nothing fancy, just a good old-fashioned fudgy brownie. I spread the batter into a greased pan and baked it until it was just set.
- While the brownies were baking, I moved on to the cheesecake layers.
Creating the Cheesecake Layers
- For the first cheesecake layer, I beat together cream cheese, sugar, and eggs until it was smooth. Then, I stirred in some melted chocolate chips. I poured this mixture over the cooled brownie base.
- The second cheesecake layer was similar, but instead of chocolate, I mixed in a generous amount of peanut butter. Oh boy, the smell was amazing! I carefully spread this on top of the chocolate cheesecake layer.
Freezing and Finishing Touches
- I covered the whole thing and popped it in the freezer for a few hours to firm up. I’m not gonna lie, this was the hardest part – waiting!
- Once it was partially frozen, I made a simple vanilla ice cream base using heavy cream, sugar, and vanilla. I churned it in my ice cream maker until it was nice and thick.
- Then came the fun part. I took the cheesecake out of the freezer and scooped the ice cream on top. I swirled in some extra peanut butter and some chopped-up brownie pieces for good measure.
- Back into the freezer it went for a final freeze.
Finally, after what felt like forever, it was ready! I scooped out a big bowl of this peanut butter brownie double cheesecake ice cream and dug in. It was seriously one of the best things I’ve ever made. Rich, creamy, sweet, and with all those different textures and flavors. Each bite was like a little piece of heaven. I will do it again in the future for sure, it’s awesome.
