Pickle Salsa Recipe: Quick and Easy for Parties

Today, I felt like making something different, something with a kick. So, I decided to make pickle salsa. I’ve seen a few recipes online and always wanted to give it a try.

First, I gathered all the ingredients. I already had most of them in my fridge and pantry. I just needed to grab some fresh cilantro and a couple of limes from the store. Once I had everything laid out, I started chopping.

Preparation

I finely diced about a cup of dill pickles. I love the tangy flavor of pickles, so I might have added a bit more than some recipes call for. Then, I chopped half a red onion, a couple of jalapeños (seeds out, because I’m not a hero), and a handful of that fresh cilantro I just bought.

Next, I juiced those two limes. I always roll them on the counter first to get the juices flowing. It really makes a difference.

Mixing It Up

In a medium-sized bowl, I combined the diced pickles, red onion, jalapeños, and cilantro. I poured in the lime juice and gave it all a good stir. I added a pinch of salt and a dash of black pepper. I tasted it and added a tiny bit more lime juice because I like it extra zesty.

Letting It Sit

I covered the bowl with plastic wrap and put it in the fridge. I read somewhere that letting the flavors mingle for at least 30 minutes makes it taste even better. So I patiently waited, well, maybe not so patiently.

Final Product

After about 45 minutes, I took the salsa out of the fridge and gave it another stir. It smelled amazing! I grabbed a bag of tortilla chips and dug in. It was tangy, spicy, and refreshing all at the same time. This pickle salsa is definitely going to be a regular snack in my house.

I even tried it on some grilled chicken later that day, and it was fantastic! This is going to be perfect for my next barbecue party. Seriously, if you like pickles, you gotta try this.
