Okay, so, today I tried making vegetarian cinnamon sugar donut muffins. I have been seeing these things all over the internet and they look so yummy, so I thought, why not give them a go?
First, I gathered all my ingredients. I didn’t really follow a specific recipe, I just kinda threw things together. I used regular flour, sugar, and baking powder for the dry ingredients. I also added a good amount of cinnamon, because who doesn’t love cinnamon? Then, for the wet ingredients, I used some plant-based milk, a bit of oil, and some vanilla extract. I didn’t use any eggs since this is a vegetarian version. And I wanted to keep it simple, you know?
I mixed the dry ingredients in one bowl and the wet ingredients in another. After that, I slowly added the wet mix to the dry mix, stirring until it was just combined. It’s important not to overmix, or else the muffins will be tough. The batter looked a bit thick, but I figured that’s how it’s supposed to be for donut muffins.

Next, I greased a muffin tin and filled each cup about two-thirds full with the batter. I sprinkled some cinnamon sugar on top of each muffin before popping them in the oven. I baked them at 350 degrees Fahrenheit for about 20 minutes. I used a toothpick and poked it in the middle. They were done when the toothpick came out clean. My kitchen smelled amazing at this point, like a bakery!
Once they were done, I took them out of the oven and let them cool for a few minutes. They puffed up nicely and had a beautiful golden-brown color. Then came the best part – I dipped each muffin in melted vegan butter and then rolled them in cinnamon sugar. Oh boy, they looked so tempting at this point!
Taste Test
Finally, it was time to taste them. I took a bite and wow, they were surprisingly good! They were soft and fluffy, with just the right amount of sweetness. The cinnamon sugar coating added a nice crunch and extra flavor. They didn’t taste exactly like donuts, but they were definitely delicious in their own way. I think each one had around 250 calories, but who’s counting, right? They were worth every single calorie. Honestly, maybe they are more like 120 calories, but I am not sure. And I’ve seen some different information on the internet saying they have 190 calories. I don’t know which is true. 86 calories seems to be not enough, right?
Overall, I’m pretty happy with how these vegetarian cinnamon sugar donut muffins turned out. It was a fun and easy baking experiment, and the result was totally worth it. I’ll probably make them again sometime, maybe try adding some different spices or toppings. But for now, I’m just gonna enjoy these tasty treats with a cup of coffee.
